Pandesal French Toast

Walk to Mengs and get pandesal.
Mix KLIM with water.
Add one egg.
Slice pandesal and dip in egg and milk mixture.
Fry till golden brown.
Eat with Karo Syrup.

When I think of French Toast, I think of my youngest brother, Peter.
He was always a great cook and a great eater.
I remember him frying up pieces of chicken for a snack late at night.
I also remember his love for toasted bread.

Rice

Measure 4 cups of uncooked milagrosa rice
add water (dip middle finger in, water should be up to the knuckle)
bring to a boil and then turn heat to low.
do not forget about it, otherwise major tutong happens.
turn off when it looks cooked.

alternative plan: get an automatic rice cooker.

Today is my brother Teddy's birthday.
One of my memories of him as a child was of him always asking me to tuck his shirt in for him. I was his big sister, so of course I obliged--albeit reluctantly.
Luckily, he does not need me to tuck his shirt in for him anymore, but I will always be here for him.

Steak and Lobster


1 lb. NY strip steak
1 lb lobster tail

Broil the steak until medium rare. Drop the lobster tail in boiling water for 5 minutes. Finish off under the broiler. Serve lobster with melted brown butter.

17 years ago, there was an earthquake in Northridge CA. It was a big one that destroyed highways and property. That same day, on a sleety, dark, drizzly day, Bryan was born. He has grown up to be a well-rounded, hard-working young man who has a knack of talking very easily to the young and old. His loves are history, baseball, football and his lolo among other people and things.He works hard at all that he does. We are so proud of his achievements. Keep it up. Happy Birthday. We love you.

PB and J (again)

2 pcs. bread
1 tsp. peanut butter ( creamy)
1 tsp jelly ( preferably grape)

Spread PB and J on one side of the bread and top with the other. Keeps indefinitely.


I love peanut butter and jelly sandwiches. As you know, it is my mainstay for school lunch should I lose my lunch break.

I spoke to Ally yesterday. Over the weekend, she, along with 4 other volunteers had made 800 PB and J sandwiches to serve people doing an AIDS walk in Philadelphia. Other volunteers made another 1200 sandwiches for this walk. In addition to the time put in making the PB and J, Ally had just put in a 60 hour work week. All this for a living stipend of around $140 per week. Nevertheless, she loves what she does and continues to speak highly of the program and staff that she works with.She is learning a lot, honing up on her leadership skills as well as her marketing skills (she has to make presentations and recruit for city-year). More power to her!!!
I am so proud of her. Needless to say, though, she cannot look at another PB and J sandwich for a long time.

Shortbread Cookies

1 lb. real butter (do not substitute)
1 cup sugar
5 cups flour

Soften butter to room temperature.
Cream butter and sugar together till light and fluffy.
Add flour by hand or pastry blender. Do not use a mixer as the mixture will get tough.
Press into 2 8-inch pans (greased). Prick the tops with a fork.
Bake at 350 degrees for 35-40 minutes. It should be golden brown and firm to touch.
Cut while still warm, then let cool.

Dunk in milk or take a bite then a sip of milk. Yummy!

I remember the day you were born. I waited by the gate to hear the news. I wanted a sister so desperately. I remember crying when I was told you were a boy. Luckily, it was a trick.You added another dimension to my life. How wonderful for me. I'm sorry I was not always there for you.We were separated by time, then distance. I am here for you now and always. I love you.

Pasta Supper

Sauce:
15 lbs. ground beef
5 big jars(the biggest you can find)of Ragu

Pasta:
10 lbs. penne

Garlic bread:
10 12-count packages

Salad:
10 bags salad mix
3 bottles dressing

Dessert:
50 bar cookies of any kind

Drinks:
6 gallons milk
3 gallons juice
3 bottles red wine ( for the chefs)

Serves 50 massive teenagers and their coaches

The husband and I have been volunteered by our youngest offspring to provide a pasta dinner, along with another parent, for the varsity football team. Senior parents usually provide this traditional meal on Thursday night before a game. Somehow by osmosis ( the foreign exchange student at our school is a senior. He doesn't stay with us but every Sunday, he comes to church with us) Bryan thought that we should be a part of this tradition. I love it that he trusts us completely. That we would step up to do this for him. And we will. Wish us luck this Thursday.
