Anchovies on crackers

1 can anchovies
crackers

Open anchovies, serve on your favorite crackers.

One year ago this week, we got news of Daddy's illness. Thank goodness Steve was home for a visit.
I remember having a feeling of disbelief and denial. I thought we still had lots of time with him. But, we didn't. I miss him.

I have been wanting to learn how to make cheese for a long time. Today, my birthday wish was to actually take the time and make mozzarella cheese. Strange that it may seem to some people who go all out celebrating their birthday and /or Valentine's day, that is what I wanted to do. The cheese looked like models of brains when they were formed into orbs. When sliced though, looked authentic and better yet, tasted great. It was a good day.

Egg Pie

1 pie shell
1 stick butter, softened
3 eggs
1 cup sugar
1 can evaporated milk
1/2 tsp. vanilla

Cream butter, sugar and eggs. Add 1 can evaporated milk. Then the vanilla. Mix well and pour into the pie shell. Bake 45 minutes to 1 hour at 375 degrees.

One of my childhood memories was going to the Quiapo market with Mom. Then, we would go to the Chinese bakery and buy pilipit and egg pie. The pie would be boxed up and tied with string. It would get eaten up pretty quickly when we would get home. I remember Dad enjoying it too. This recipe does not quite taste the same, but after 30 years of living in North America, it is just going to have to do.
