Mozzarella Cheese
1 gallon whole milk
1/4 tablet rennet(dissolved)
1 1/2 tsp. citric acid
Heat milk to 55 degrees, add citric acid while stirring.
Heat mixture to 90 gegrees, add rennet mixture. Stir up and down.
Heat to 105 degrees until curd start to form.
Drain curds and heat in microwave 1 minute. Knead like bread.
Heat again in microwave 35 seconds. Knead. Microwave 35 seconds again.
Knead until smooth and form into balls. Eat warm or cool in ice water. Enjoy!
I have been wanting to learn how to make cheese for a long time. Today, my birthday wish was to actually take the time and make mozzarella cheese. Strange that it may seem to some people who go all out celebrating their birthday and /or Valentine's day, that is what I wanted to do. The cheese looked like models of brains when they were formed into orbs. When sliced though, looked authentic and better yet, tasted great. It was a good day.
