Egg Pie
1 pie shell
1 stick butter, softened
3 eggs
1 cup sugar
1 can evaporated milk
1/2 tsp. vanilla
Cream butter, sugar and eggs. Add 1 can evaporated milk. Then the vanilla. Mix well and pour into the pie shell. Bake 45 minutes to 1 hour at 375 degrees.
One of my childhood memories was going to the Quiapo market with Mom. Then, we would go to the Chinese bakery and buy pilipit and egg pie. The pie would be boxed up and tied with string. It would get eaten up pretty quickly when we would get home. I remember Dad enjoying it too. This recipe does not quite taste the same, but after 30 years of living in North America, it is just going to have to do.

I vaguely remember egg pie from
quiapo but strangely enough remember that I enjoyed it.
So you taught your students wearing your pajamas today, huh.
