Playoff Breakfast

30 dozen eggs, scrambled
10 packages cream cheese, cut into cubes

30 lbs. potatoes, boiled
6 loaves bread, toasted
2 lbs. butter

4 gallons juice, any kind
80 1/2 pint containers of milk

4 jars strawberry jam
4 jars applesauce

Prepare accordingly.

The Galena High School football team ended their regular season undefeated. They went 9-0. During the post season, the pasta supper has been served up by one of the restaurants in town. Breakfast before the game has traditionally been prepared by volunteer parents at the school cafeteria.Other parents line the main road ( that the other team will take) with signs of all the names of the players, coaches and cheerleaders. The atmosphere, while cooking and setting up the signs, is one of camaraderie and cooperation and fun.We prepare for about one and one-half hours. It takes about 15 minutes for the 80 members of the team to eat.
Interestingly enough, when the players are all together sharing their morning meal, they speak in quiet tones amongst each other. They clean up after themselves and make it a point to return to the serving line to thank us.It is gratifying to be a part of this community. They have won one playoff game and are on to another. Thankfully, it is here at home. Wish our team especially #55 good luck for today's game. He has worked hard all year for this season.See his action shot on the thonline.com website.
